The “Skinny” On High-Fructose Corn Syrup

If you’re like me, you’ve heard a great deal of conflicting talk about the naturalness, goodness, badness, healthfulness and harmfulness of high fructose corn syrup (HFCS).

The FDA says it can be labeled a “natural” product because it is made from corn. Yet, a percentage of the corn it is manufactured from is known as GMO or has been genetically modified. That doesn’t sound so natural to me.

The corn people tell us that HFCS is the same as sugar and is healthy in moderation. Yet, HFCS is much sweeter than regular table sugar or the sugars found in fruit. So the definition of what is “in moderation” for HFCS is different than that for white processed sugar. They neglected to tell us that.

There has been a good deal of noise about HFCS being responsible, in part, for the current rise in childhood obesity. After all, HFCS has replaced sugar in a large number of packaged foods and beverages kids (and adults) consume on a daily basis.

A study presented at the American Society of Nephrology’s 42nd Annual Meeting found that the rate of obesity has increased sharply since the development of HFCS and that the prevalence of HFCS in processed foods may have something to do with it. It’s been reported that Americans now consume 30 percent more fructose than they did 20 years ago.

Yet, the website sweetsurprise.com claims that high fructose corn syrup does not contribute to obesity any differently than sugar. In support of this assertion they quote from a 2007 study:

“An expert panel, led by Richard Forshee, Ph.D. of the University of Maryland Center for Food, Nutrition and Agriculture Policy, concluded that “the currently available evidence is insufficient to implicate high fructose corn syrup per se as a causal factor in the overweight and obesity problem in the United States.” The panel’s report was published in the August 2007 issue of Critical Reviews in Food Science and Nutrition.”

Hmmm. We all know that studies are designed in different ways and that their results can often be spoken of in a way that supports opposing claims. But a visual assessment of childhood obesity and even obesity among the college-age population shows weight is on the rise. A peek at the ingredient labels shows a definite move from sucrose and fructose to high fructose corn syrup. But correlation does always indicate causation.

The question is, is there science behind how the body breaks down and responds to HFCS versus sucrose or fructose? The answer is, yes.

In the March 2011 issue of Diabetes, Obesity, and Metabolism it was shown that cortical control areas in the brain responded differently to the infusion of fructose than they did to glucose.

“BOLD signal decreased in the cortical control areas during fructose infusion (p = 0.006), corresponding with increases of plasma fructose and lactate. Neither glucose nor fructose infusions significantly altered BOLD signal in the hypothalamus.”

The cortical control areas surround the hypothalamus which is a key player in appetite levels and control of metabolic hormone production.

In essence, glucose and fructose are both simple sugars. Yet the body does not process them in the same way. In 2002, the Department of Nutrition at the University of California­—Davis conducted a study on fructose, weight gain and the insulin resistance syndrome. Here is part of the abstract:

“Because fructose does not stimulate insulin secretion from pancreatic ß cells, the consumption of foods and beverages containing fructose produces smaller postprandial insulin excursions than does consumption of glucose-containing carbohydrate. Because leptin production is regulated by insulin responses to meals, fructose consumption also reduces circulating leptin concentrations. The combined effects of lowered circulating leptin and insulin in individuals who consume diets that are high in dietary fructose could therefore increase the likelihood of weight gain and its associated metabolic sequelae.”

What’s more, in a large 2009 study looking at the connection between HFCS and hypertension, Diana Jalal and colleagues from the University of Colorado Health Sciences Center recruited nearly 4,600 adults over the age of 18. They found that individuals who consumed more than 72 grams of fructose each day were between 26 percent and 77 percent (depending upon the blood pressure threshold) more likely to be hypertensive than those who eat few foods containing added sugar.

These studies do not show HFCS in the same light as being “just the same as sugar.” In the wake of all this hoopla, Snapple beverages have discontinued their use of high fructose corn syrup and have returned to the use of sugar in their iced tea and other fruit flavored drinks.

It would be a safe bet for all of us to read the labels and choose healthier options. Where sugar is the ‘healthier’ option, of course it is just a distinction between the lesser of two evils.

    Conflict, shmonflict. Of course, there’s conflicting “evidence.” You can believe the ‘science’ of America’s hardcore corporate schmucks [the AMA, the FDA and Big Pharma], or you can believe those who use real science. HFCS is a bitchin’ brew that has the potential to destroy your pancreas. Better livin’ through chemicals, people!
    It makes beer seem like a gift from the gods (as long as you don’t try to drink all of it). HFCS is the perfect chemical storm, and no matter what America’s “official” guardians of science say, HFCS won’t get or keep you healthy. It is EXTREMELY profitable [there's your first clue, folks].
    Either surrender to non-science, or protect your health. And remember, that $^*# is in your food, too.

      It would be laughable if it weren’t so tragic: you’ve got panicky people out on the left coast driving to the drug stores to pick up potassium iodide pills by the truckload, in fear of something that poses them no more threat than a dental x-ray…and they’re probably sipping on a HFCS-laden soft drink as they do.

    I do not put my trust at all in science. It is junk science. They change their minds about what is good for you every couple of years. First its good, then its bad, then its good again. I refuse to trust in science, the same science that thinks a bird pooped on a rock, the sun fermented it, and man stood up and walked. I for one, aint buying into it. I am a creation, and I know my creator. I also know, from watching old folks Ive know for my 52 years of life, who eat natural foods. Eggs, Milk, Cheese, Beef, Potatoes, Real Sugar, salt and pepper, and they all seem to have no problem living into their late 80′s and 90′s, and some have cracked 100. If I live that long here, its plenty long enough, as I know there is something better waiting. What I see is people who diet on this and diet on that, and stop eating this and stop eating that, and it seems they are always sick, as they ingest all these chemicals in the diet food they eat. No thank you.

      You’re on the right track,(son.) I am 93 and take no medications. I eat what I want, when I want, if I want. I still have my own knees and hips. But I steer clear of all that extra junk in our food, eating as much natural stuff as possible, even growing my own. I am living not existing.

        I’m 39 now. I eat as much natural food as possible, and am hoping to soon buy a rural property to grow my own near town. I also juice-fast once every three months for 7-10 days or so to help my body detox the garbage we breathe in and inadvertently eat. I weaned myself off all asthma and allergy medications nearly 20 years ago, and the 1st detox I did even cured my snoring!

        Please everyone, try to eat as much raw, unprocessed, natural food as possible. Your body will thank you.

        Frank is on the money regarding eating as much unprocessed, non-refined, non-junk stuff as possible. Forget what’s easy and eat what’s natural. i heard a good description recently that the smart eater purchases his or her food from the outer perimeter of the grocery store,where produce, dairy and meats are found. Shun those middle aisles, folks — that’s where the industrialized garbage is shelved!

      You know, it’s interesting how this “expert panel” of shills whose propagandist conclusions for the Univ. of Maryland Food, Nutrition and Agriculture Policy managed to overlook the 2007 work of a group of Harvard scientists. The Harvard group reported in 2007 that “Fructose induced hyperuricemia might have a causal role in metabolic syndrome, hypertension and other chronic disease”.
      “Hyperuricemia” also correlates with increased gout risk.
      From 1907 to 1997 the addition to diet of fructose sweeteners increased an ungodly 2100%. That and the reduction of fiber intake had the most significant positive correlation to the huge increase of type 2 diabetes – with all it’s relations to chronic inflammation and most of the killer degenerative diseases. (See Dec. 2008 issue of Life Extension Magazine, pp. 69-77 for more solid information and the citations, both recent and going back decades.)
      If you want to be healthy I highly recommend this foundation – Life Extension Foundation, their publications, advisors and products. They are way ahead of most other health (even professional publications) sources with ahead-of-the-curve, understandable, practical research and warnings.
      It is unwise to trust government, the medical guilds and main stream media presentations for health advice and help – except emergencies.

    just another example of the law of unintended consequences. tax cane and sugar beet imports to protect 31 domestic producers; and subsidize corn growers to produce more corn, and voila’, a more cost effective way to sweeten food products to offset the high sugar prices, leading to the seemingly negative effects on health. tax policy strikes again.

      You nailed it, vsop4u. The US government subsidizes industrial farm conglomerates to grow more and more corn, then they have to find ways to use this overabundance. Why do you think corn is a main staple of cattle feedlots? Cows are ruminants; corn is in no way a natural part of their diet. Same thing goes for HFCS. Just a way to use all that excess corn. I’ve also read that HFCS is a type of carbohydrate that the brain can not use as fuel, whereas cane sugar, normal fructose, etc., are. But there’s BIG MONEY in corn, and that’s why we get panels of scientists who are willing to go on record saying that the bad is good for us.

    Princeton University also did a study that showed that HFCS has a significantly higher glycemic effect on people than normal fructose. It’s poison to diabetics.

      Jerry D, if you want something to think about, ask a GP (5 or 10 would be better) what they tell their diabetic patients about HFCS. At least HALF will tell you that they tell their diabetic patients to ‘go ahead and drink it.’

    The best way to eat healthy is to make everything yourself from scratch. My motto is to get as close to nature as you can.(meaning the less processed the better) When man has made it, it usually means trouble. There are things out there that are healthy, you just have to look for them.

    If fructose is bad for us then so is fruit, because some mean old deity put it there to harm us. Get real and grow up, people. For my part I’m glad for the discovery, turning cheap corn starch into sugar, which incidentally, is the fuel of life. If you don’t handle sugar well, look for a mineral deficiency, like chromium, vanadium, and silica, which have been largely stripped from our diets with the processing and removal of brans from whole grain, and chemical farming that fails to adequately fertilize.

      Fruit has all kinds of nutrients in it in addition to fructose in addition to fiber that helps one absorb the fructose in a healthier manner. This helps mitigate the damage that fructose does. HFCS was invented in a Japanese laboratory and it is impossible to avoid, but worth the effort. Sure the USA has the cheapest food in the world but we were 5th in longevity when I was a kid and now we are approaching 50th. What happened? Well, we decided we could be god and put a spider gene in corn and so many others you wouldn’t believe it. Leading doctor don’t recommend to much fruit either, and never fruit juices! Some fruit is OK but don’t go overboard. In addition 86% of our corn never existed in nature. It was created in a lab and gave British rats liver or kidney problems after 3 weeks. South African chickens wouldn’t eat it, but it’s good enough for us. Sorry, even popcorn is one of the top ten polluted foods in the USA so I only buy and eat organic. Same with strawberries. There is not enough room here to tell you all that is wrong with strawberries that are not organic. I don’t avoid all HFCS (that’s impossible) but I make a good effort to put back any product that contains it. If the package just says “sugar” I now avoid that too because it too probably beet sugar which is genetically modified. If it doesn’t say ‘cane sugar’ I tend to reject it. HFCS is the number one source of calories in the USA. I don’t even like using corn in my vehicle (ethanol) because more than 10% seems to cause problems with the standard construction of the parts other than the engine but at least here the GMO corn won’t hurt me, only my wallet, when I have to buy fuel more frequently because ethanol has less energy in it that gasoline and repairs more often. I agree with the elderly gentleman who said that the closer we stay to the way God and nature created things the better off we are. Corn oil is another I avoid, and cottonseed oil (both are 93% GMO). At least in Europe consumers are told what they are buying but the Wikileaks information showed that we are trying to badger them into using GMO seeds as well. If you are what you eat then I fully understand why we have fallen from 5th place in longevity to nearly 50th, and now the chemicals needed to grow the new GMO foods have spawned a new life form never seen before on this planet much as I predicted in “THE LAST DAYS OF THE LATE GREAT UNITED STATES and the Great Famine that Followed.” Eat what you want but the life you save, if you get back to nature, may be your own! God help us!

    Conflicting reports?
    Upon reading and doing at lot of research about the topic of nutrition,if I believed everything I read,I would never eat anything.
    Common sense–God-given fresh organic food always, grow your own food as much as possible, stay clear of all processed foods if possible and read carefully each label for both sugar (whatever type) and salt content as well as all of the listed ‘preservatives.’
    The idea of ‘dieting’ and weight control has become a gigantic and profitable industry which is OK except little is said about the specific ‘content and nutritional value’ of the types of foods that are recommended, i.e., nothing but conflicting rep

    Sugar in itself is not bad in moderation, but various forms are in practically any “FDA APPROVED” processed food. The one thing the Cancer Reseachers will not be honest about is the fact that processed sugars will feed Cancer & help it grow. The cancer treatment industry is a multi billion dollar industry making doctors and pharmaceutical companies richer and richer. The large percentage of them don’t give a damn about curing anyone, they just want to keep feeding you the deadly chemotherapy, which kills the good cells and the bad cells. I run away from “FDA APPROVED” items as fast as I can, because more than half of them will speed up your demise.

    Bottom line…it is all about greed and money. FDA is controlled by the elite. Everyone should watch the movies “Food Inc” and “Earthlings”. Big eye openers. Think about how a few years ago there was a huge campaign to drink more milk. A bunch of BS. They were worried because milk sales were going down and people were turning to soy. Then a bunch of propaganda came out about how soy is bad. What a lie. Milk = hormones, antibiotics, and who knows what else.

Moderation is a well worn phrase and it still works well but then your genetic make up can have a lot to do with your diet, ability and physical make-up, again you have to make the best of what you have, so asking questions, getting decent advice and paying attention are all on your shoulders, the earlier you learn the lessons the better you will cope….look out when you cross the street or stuff your face.

    Thanks Mark,I’ll send this around.People will accept it or reject it but I have found the corn meal that i buy now,or did,will lead to fat on the mid section very rapidly.Formerly,it did not.I believe the geneticly modified corn is the culprit.Sure,it produces more grain but it’s a low quality food grain.It is higher in starch content and it will sicken cattle in a feedlot if they stay on it too long.

    Trust me,there was a documentary on TV a while back.It may have been “Food Inc.”.In that film the interviewer was asking a farmer aout the quality of the modified corn.He paused while shucking an ear and said something to this effect,”It’s not high in food value.It’s got a high starch content.”

    Don’t guffaw.I can’t recall the exact quote.As God is my judge,that portion of the interview was cut from subsequent reruns.I even wrote a letter asking why.I never got an answer.

    Think it’s nonsense?Add 50% cornmeal to your morning oatmeal and watch
    the results.

    Wow! I am astounded by the ignorance posted here, both in the article and the comments. First, fructose is as “natural” as anything else that comes from the earth. The idea that fructose is somehow bad for humans is simply one of the most ignorant statements that any person can make. Fruit has been a part of man’s diet since before he was man, it is sucrose that has been added in the last few hundred years, and if anything is unnatural for humans to digest, it is sucrose.
    The health issues we are observing is not because of the foods we are eating, it is simply because we don’t get any or enough exercise.
    Get out of your air conditioned houses, get your fat lazy kids off the X-Box, get your fat old man up, and go do something every day that taxes your heart, makes your muscles sore, and actually accomplishes something, and stop believing lies and propaganda that even the most basic understanding of humanity can so easily disprove.

      Some truth in what you say about exercise, but if genetically modified organisms (GMO) and genetically engineered foods were so great why are Europeans given the right to choose and we are not. We are simply told there is no difference although there were never any studies done on humans. We are told the same about artificial bovine growth hormones (rBST and rBGH) that there is no difference. Since these are illegal in most of the developed world it is no wonder that Monsanto sold off that division, but hey, they are good enough for Americans who will eat anything. Animals that for thousands of years ate the forage after the crops were harvested started dying when they did that with the GMO foods fostered on farmers in India, and now Monsanto is requiring that farmers, even here in the USA, who buy their ‘improved’ franken-food seeds, sign a contract or agreement that the farmer is forever responsible for everything relating to the use of that seed, and Monsanto who created these things is innocent. One farmer in Australia is being ruined financially because his seed contaminated the organic farm nearby and the organic farm lost their livelihood as the foodstuffs grown there will no longer certify as organic. They sued and rightly so. I know I wouldn’t want to buy any land within 5 miles of a farm using GMO seed as the new and unnecessary GMO Alfalfa (the USA’s 4th largest crop) will contaminate other crops as far as five miles away. In the last book of the Bible, using somewhat cryptic language, it says a time will come upon the world when it will take a days wage to earn a days food. I don’t know what the cause of such excessive prices will be (other than the intentional inflation our government is trying to create by excessive spending) but I suspect famine caused by crops that never existed in nature will have a part in it. Eat what you want but I’ll try to stay close to way God and nature provided for the past several thousand years. Dum Spiro Spero!

    If you look at calories alone both table sugar/sucrose and HFCS contain four calories per gram. They are both equal in the amount of calories they bring into your body.

    In 2004, researchers at Louisiana State University and University of North Carolina published a paper that has become part of this overweight/obesity debate. Their theory was that high fructose corn syrup in beverages could play a significant role in the obesity epidemic. Their research showed that from 1970 to 1990 there was a 1,000 percent increase in HFCS consumption and that this increased consumption directly correlated with the rise in obesity rates.

    However, a small study that was published in the July 2007 American Journal of Clinical Nutrition found no difference between soda sweetened with sugar and soda sweetened with high fructose corn syrup. The University of Washington researchers tested 37 men and women on subsequent hunger, thirst, and satiety after drinking cola with sucrose versus cola with HFCS. They found no difference between the two sweetened sodas as it applied to the satiety factor 20 minutes later and the number of calories consumed in their next meal.

    Look at labels..ingredients are listed in descending order of amount. The first listed is the largest ingredient.

    I would like to know who funded the original study. Truth is…sugar and any source of high amounts of fructose is not good for you. It’s always something. First it’s bad, then good…..cheese, coffee, dairy, beef…on and on. People have lost all common sense of moderation and are constantly being jerked around by “studies” that purport something to be bad. Researchers are constantly looking for something that can get a grant to study. That’s how they survive. Take it for what it’s worth.

    HFCS is 55% fructose and 45% glucose. Sugar is 50/50. It’s not hard to see why obesity is rampant…lazy, fast-food guzzling, soda swilling averaging 50-60 pounds of HFCS plus sugar per year.

    Do not assume a mixture of 60% fructose and 40% glucose is the same as HFCS. I believe that HFCS has several toxins in it. They include mercury, Bt-toxin [pesticide], glyphosate [herbicide] and possibly 2,4-D [main ingredient in Agent Orange]. I know that when I was very sick, by avoiding HFCS, aspartame, trans-oils & fats, and MSG, I mostly recovered. But now I am having trouble with ‘sugar’. It turns out we now have sugar from Bt-sugar beets that have the same Bt-toxin & glyphosate as HFCS. It seems the only safe sugar is from sugar cane, [or from organic sugar beets].

      Trichlorophenoxyaceticacid. it was contaminated by extremely toxic

    Since my viewing of SWEET MISERY – which is related to ASPARTAME – I found evidence and discussion of High Fructose Corn Syrup – and I have, ever since, read the labels and avoided both additives from any foods I consume. Trouble with ASPARTAME, is that it can have several other names, which are all the same thing…. ASPARTAME.

    One of my favorite beverages is SIMPLY LEMONADE … it has 4 ingredients.

      Yes, Simply lemonade (a coca cola product, btw) has 4 ingredients, one of which (“natural flavors”) includes brominated vegetable oil, which is a soy derivative. 94% of soy grown in the US is GMO. Multinational Marketing execs will put a “natural” moniker on anything, knowing it will dupe most American shoppers. I don’t trust coca cola, and I no longer buy any of the “simply” products that list “natural flavors” among their ingredients. They taste good, but they aren’t good for you.

    CS, PLEASE don’t waste our time if you don’t know the difference between fructose and HFCS. You need to get re-educated so you can compensate for all that concentrated IGNORANCE you soaked up the first time in public school. Do you live in Wisconsin? Are you on Obummer’s short list for potential czars?

    I, for one, am glad that Snapple turned back to sugar. Something comes to mind though. With the great rise in the price of corn,and the rise in price of corn fructose, could it be that it is CHEAPER to now use sugar. Thy might not be as consumer minded as you think !!!

    Interesting article, and in line with what my doctor has said. Most of the population is gluten intolerant, which is in ALL grains including corn, second highest only to wheat. Stands to reason that corn syrup is like all the other processed foods which contain gluten, gluten, gluten and just plain crap. You want to keep from triggering all the tons of auto-immune reactions and systemic inflammation going on today? Stay away from corn syrup and gluten.
