There is another reason to switch from processed foods to fresh fruits and vegetables – scientists believe that they play a role in reducing the risk of developing a particular kind of diabetes.
Researchers from Tulane School of Public Health and Tropical Medicine and the Harvard School of Public Health have found that eating one serving of green leafy vegetables or three servings of fruit per day reduces the risk of developing Type 2 diabetes.
In addition to that, "people who have risk factors for diabetes may find it helpful to fill up on leafy greens like lettuces, kale and spinach and whole fruits, like apples, bananas, oranges and watermelon rather than drink fruit juices,"says Tulane epidemiologist Dr Lydia Bazzano.
That’s because they contain lots of liquid sugars that get rapidly absorbed from the stomach.
The team from Tulane reviewed diet and health data from 71,346 nurses who participated in the Nurses’ Health Study from 1984 to 2002.
The study was published in the online issue of Diabetes Care.
According to the National Institutes of Health, 23.6 million Americans, or 7.8 percent of the population have diabetes. Of these, 5.7 million do not know they have the disease.
