Illinois School District Unveils ‘Nutrient-Dense’ Lunch Menu

ARLINGTON HEIGHTS, Ill., (UPI) — A school district in the Chicago suburbs said the coming school year will feature menu additions including poached chicken sliders and grilled zucchini chips.
Arlington Heights School District 25 held public tasting events last week for parents and students to sample the new items on the “nutrient-dense” menu, which also includes toasted chickpeas, a turkey meatball soup and a nachos-like dish dubbed the “fiesta scoop,” the Chicago Tribune reported Monday.
Coletta Hines-Newell, the district’s food service director, said the aim of the tasting events was to build support for the “envelope-pushing” items and familiarize picky eaters with taste of the healthier options.
Hines-Newell said the district has previously offered healthy options, but it stopped serving grilled salmon and baked fish this year due to a lack of interest from students.
“We gave up on the fish. We tried for a couple of years. It has not been successful,” Hines-Newell said.
